Azeez sugar is an unrefined nutrient rich sugar made from natural organic cane sugar Azeez sugar provides the natural sweetness of cane sugar as well as the essential nutrients such as calcium, potassium and magnesium contained in the molasses. Azeez sugar is unrefined and is made from pure sugar cane juice that is evaporated out over low heat so that the important nutrients are retained. Azeez sugar provides a rich earthy molasses flavour with the natural sweetness of cane sugar. Made from pure organic sugar cane, Azeez sugar is made through a slow, natural and time consuming process. The juice is extracted from the sugar cane by pressing. It is then collected and simmered over very low heat so that the moisture evaporates but not so hot that the nutrients are destroyed. Once enough moisture has evaporated out the sugar is ground into a consistency of small crystals. The colour of the Azeez sugar may vary from batch to batch as this is linked to the growing conditions and nutrients of the soil. Azeez sugar has a delicious caramel flavour and contains important nutrients such as calcium, magnesium and potassium. By comparison, white or brown sugar contains very few, if any of the nutrients found in raw cane sugar. As white or brown sugar processing involves high heat and mechanical operations, most of these nutrients are destroyed. The fact that Azeez sugar retains the natural goodness of raw cane sugar is one of its most important attributes. Azeez sugar can be substituted for white or brown sugar in equal portions and can be used in any application where sugar is called for in a recipe.
